Okay, I have another beet recipe for you, if you can even call it a recipe. It's more a statement of fact: BEETS and GOAT CHEESE GO!
1. Peel and slice beets. Steam until tender.
2. Plate, crumble on some chevre (basic goat cheese), salt and pepper to taste.
3. For a little extra oomph, give a scant drizzle of balsamic vinegar or squeeze of lemon.
4. EAT!
How to sell it to kids? Pink Pee! Sorry (not really), I know that's not table talk.

Thank you, just what I needed to motivate me into doing something with the beets at the bottom of the fridge! Not sure my daughter is going to like the pink pee thing but I'll give it a go!
