Nut 'n Honey Cakes

Nuts and honey. A match made in heaven by someone on the go with hungry kids in tow. The first manifestation of perfection came between two slices of bread - a.k.a. Peanut Butter and Honey Sandwich. Mmmmmmm. Second evolution: Nut and Honey Cheerios. Not as healthy but beautiful when strung out on a piece of yarn by offspring. Mine have been properly petrified with years of ages, which reminds me of a poem
If it doesn't Rot,
eat it Not!
A more recent mutation of the nut and honey marriage comes together often at my house when the kiddos want a quick treat/dessert/snack or when we are having our gluten-free-friends over to play in the backyard.
Nut 'n Honey Cakes
Simply mix
1/4 cup peanut butter and
1 tbsp honey

Spread liberally on
4 rice cakes - chose a plain or sweet flavor rather than savory cake and definately check the lable. There are good and very bad rice cakes out there. Make sure yours doesn't have chemicals or refined sugar. We also check ours for gluten to make sure our friends can partake.

Top with
1 handful spanish peanuts (the kind with the papery skins still on)

If you're making it for dessert or possibly a birthday cake .  . .
Sprinkle on
1 handful mini marshmallows -omit these if you are going for a "clean" recipe and check your brand of marshmallows cause not all are gluten free


VARIATIONS:
1. Peanut Butter Chocolate Cakes: Add 2 tbsp melted dark or unsweetened chocolate to the peanut butter and increase honey to 2 tbsp or to taste (based on what type of chocolate you use). Sprinkle the top with sifted cocoa powder or drizzle with semi-sweet chocolate before topping with peanuts. 2. Almond Honey Cakes: Subsitute almond butter and slivered almonds for the peanut butter and peanuts. 3. Vanilla Spice Nut Cakes: Add 1/2 tsp vanilla extract, 1/2 tsp ground cinnamon, 1 pinch ground ginger and 1 pinch nutmeg to peanut butter. Top with a dusting of nutmeg before adding peanuts.

  1. Haha, I LOVE rice cakes and peanut butter. Literally one of my favorite snacks ever! This is so cute, they look like they totally enjoyed those!
