I know it has been a while since you've heard from me. But I have a good reason!
After talking with the awesome people at USOUTDOOR.com, I've agreed to do some blogging on their site when they launch a new web-design and blog this summer.
I'm a absolutely thrilled since the hit count on their awesome site is in the THOUSANDS! With that said, I have been working out how I am going to blog for USOUTDOOR.com and Lindsey@Large too. Here is the plan . . .
Lindsey@Large will now focus a bit more on my life and family and of course FOOD! You'll find lots of recipes and a few stories here - more stories, tips, reviews, and discussion at USOUTDOOR.com.
I'll keep you posted on when the USOUTDOOR.com blog launches. In the meantime, check back here for some tasty recipes that I tested for my family birthday blast this last weekend.
Yep, it was my birthday . . . and my daughter's . . . and my dad's! Three on one day! It's like a second Christmas - not that any of us were born under a star or prophesied to be the Messiah - so not quite like Christmas. But fun none the less. Now I'm 28 and feelin' great (accept for this major smile wrinkle on the right side of my face)!
I have an assignment for you now: Are there any ingredients you need suggestions for? Recipes that you would like to see modified for greater health? Healthy eating tips? I would love to give you recipes that you want and will use. So let me know! I love seeing your comments.

I am apart of a harvest basket and I get weekly local fresh produce. I love cooking with the surprised goods each week but I have hit a wall with some of the greens. Bok choy, kale, and beets. I tried bok choy in salad with dressing and it didn't help at all...please help!
