Banana Nut Pancakes

Perfect pancakes Jack Johnson style. I love me some banana pancakes. Not just pancakes topped with bananas. Think banana bread meets light and fluffy. Throw on some chopped walnuts and you've got a lazy weekend favorite healthed up with delicious additions rather than sub-par substitutions.

Ingredients
2 cups whole wheat pastry flour or rice flour for a crispier texture
1 tsp baking powder
1 tsp ground cinnamon
3/4 cup almond or soy milk
3/4 cup apple juice
1/4 cup canola oil 
2 mashed bananas
2 eggs
1 tsp vanilla extract
1/2 cup chopped walnuts
1 banana sliced

Directions
1. Mix wet ingredients together then add he dry and mix just until combined. Try not to over mix or pancake will get chewy.
2. Ladle 1/4 cups of batter onto hot greased skillet, spread slightly with the back of the ladle. Brown on both sides (couple minutes).
3. Top with sliced bananas and walnuts. Add another sprinkling of cinnamon and drizzle of maple syrup.
